Mango & Mint
Wednesday, August 5, 2009 at 11:47PM To help with the thickness we half the fresh mango with juice though it is still more viscous redelelicent . This is another brilliant summer drink, the ice cubes are a nice touch but as a garnish are purely a luxury.
serves 8
3 cups mango juice
1 whole mango, chopped, about 1 cup
1 cup vodka
four sprigs fresh mint picked clean, plus 36 leaves
36 frozen raspberries
juice of two limes
32 raspberry ice cubes*
Blend 1 cup mango juice, pulp, vodka and mint with the lime juice until smooth. For the ice cubes place 1 raspberry and 1 mint sprig in each slot of an ice cube tray and cover with the remaining mango juice. This will melt and not water down the drink, plus its visually appealing. These can be made weeks ahead in bulk and kept in an air tight container in your freezer.
