Passionfruit & Jamaica spritzer 

This drink was developed out of the need for a signature cocktail for Josie and Brian's birthday party. It fell on August 2nd, so we wanted something original and refreshing. The combination of jamaica tea which is inherently bitter and the sweet, almost cloying passionfruit nectar is a match made in heaven!

serves 8

2 cups jamaica tea*

2 cups passionfruit nectar

juice of two limes, plus zest

2 cups vodka

1 cup club soda

pioncillo for garnish, preferably a cone or brick piece 

limes for garnish

Mix the tea, nectar and vodka in a pitcher. Top with ice and stir until chilled, pour into 8 glasses and top with soda water. Grate the pioncillo over the top over the top of the drink and garnish with a lime. 

 

*to make jamaica tea steep 1 good handful of dried jamaica, (about 1 cup) in 2 cups cold water for 30 minutes, strain through a  fine meshed sieve. Stir in 1/2 cup sugar, or a scant 1/3 cup agave nectar, until dissolved. The jamaica can be reused once again for more tea.

Jamaica, (hibiscus flower in spanish) can be found in any latin market and will store indefinitely in your pantry.

Agave nectar is an amazing natural sweetener from the agave plant, from which tequila is distilled. It is far sweeter than sugar and honey, though not quite as viscous.
